  • Vinification: maceration on the skins for 15/20 hours in pneumatic press with the addition of specific enzymes. Then, by inoculating selected yeasts, alcoholic fermentation at a controlled temperature (15/16 ° C) begins. The malolactic fermentation is carried out depending on the vintages.

  • Vinification and aging times: 6-8 months in steel tanks with weekly batonnages and 2 months in bottle

  • Color: pale straw yellow, with greenish reflections

  • Aroma: the olfactory component is ample with floral hints of peach, enriched by a note of ripe apple and banana

  • Taste: the mouthfeel is pleasant, fresh, slightly sapid, full

  • Alcoholic content: 12.5-13 %vol. depending on the vintage

  • Wine matching: ait pairs well with appetizers, light and seafood dishes, white meat dishes. It is ideal as an aperitif.
