  • Vinification: soft destemming and crushing, alcoholic fermentation with selected yeasts at a controlled temperature (23-25° C). Racking and clarification by 2-3 racking. The spontaneous malolactic fermentation in steel tanks takes place and then we carry out the maturation for 3-5 months. Filtration during the bottling.

  • Vinification and aging times: 8-9 months in steel tanks with weekly batonnages, 12 months in 90% French oak regenerated barriques and 10% American oak with maturation on noble lees, 3-6 months in bottle

  • Color: intense garnet red with violet reflections

  • Aroma: fine and elegant bouquet where plums, small fruits and spices can be recognized

  • Taste: the mouthfeel is muscular, soft with a rich and enveloping tannic texture. Very persistent.

  • Alcoholic content: 14 %vol. depending on the vintage

  • Wine matching: first courses, meat dishes, cold cuts and medium-aged cheeses. It is also excellent as meditation wine.
