AN ENVELOPING SAPIDITY
It differs from the classic Piedmontese white wines for the high spurred cordon training system, the influence of the wind and the sea and the vinification method that give it particularly evocative aromas and flavor to the taste.

Vinification: maceration on the skins for 15/20 hours in pneumatic press with the addition of specific enzymes. Then, by inoculating selected yeasts, alcoholic fermentation at a controlled temperature (15/16 ° C) begins. The malolactic fermentation is carried out depending on the vintages.
Vinification and aging times: 6-8 months in steel tanks with weekly batonnages and 2 months in bottle
Color: pale straw yellow, with greenish reflections
Aroma: the olfactory component is ample with floral hints of peach, enriched by a note of ripe apple and banana
Taste: the mouthfeel is pleasant, fresh, slightly sapid, full
Alcoholic content: 12.5-13 %vol. depending on the vintage
Wine matching: ait pairs well with appetizers, light and seafood dishes, white meat dishes. It is ideal as an aperitif.
